So I saw this was available on steam. I was going to buy it, but below it says 'windows 2000/XP (only)'. Since i'm using windows 7 x64 I'm thinking this might be a problem. Has anyone tried this on a newer setup? Also, is it playable in 1920*1080?

That is the requirements from when the game launched, Win7 did not exist. There are probably only 2 or 3 games on Steam total that list Win7, yet they all work on it as far as I know.

Anyway, Beyond Good and Evil works fine on newer OSes. I think you have to run in a compatability mode to avoid texture corruption though.
