I don't know which monitor I should get for Christmas, I was going to do a dual monitor set up with this monitor that I have now.

I was going to use the IPS monitor for gaming, 1ms vs 5ms is not a large difference anyway so I don't mind. I just want the better picture and viewing angles of an IPS monitor. I am also looking for the monitor that will give me the largest field of view, only 21:9 can do this and 21:9 seems to work with many games.

21:9 seems to work with most games, this guy tested 10 and only 1 didn't work, The Witcher.

You can do 21:9 on a 27 inch monitor but I haven't found any videos on how that would look. Would 21:9 on the UltraWide Monitor have more FOV than 21:9 on a 27 inch Monitor at 2560x1440?

Many games can be set to a wider field of view while still using a 16:9 resolution. Running a game in an actual 21:9 resolution on a 16:9 monitor would result in letterboxing similar to this.

21:9 monitors can display 16:9 resolutions through pillarboxing (black bars left and right), so everything is still fully compatible; games that don't work well in ultra-widescreen can simply be set to a narrower resolution instead.

This is something that I wished Surround/Eyefinity had. You can play in a window, but in many cases performance and responsiveness suffer.
