If you're only doing desktop work, it would be easier to just get any 2 video cards if you have enough slots in your pc for it. The desktop doesn't have any need for an advanced card like the 5870 or 5850.
But yes, the 5870 or the 5850 can do what you have in mind, just not using EyeFinity mode though. Also, either 1 of your displays must have a DisplayPort on the back of it, or it'll cost $100 more for the active DP-to-DVI adapter to run DVI/HDMI.
Depending on what slots your computer has free, it would make more sense to pick up another PCIe video card or a PCI video card to run the third display. As you're only doing desktop work you should be ok with pretty much any mid-range card. Just make sure you match the brand type and series with the current card you use as to not have driver conflicts. EyeFinity is specialized for DirectX and OpenGL based full-screen gaming, so it's not targeted at the same thing you're planning to use it for,
