The aspect ratio skewing issue you mentioned regarding streaming can be resolved by changing the desktop resolution. Some games determine the aspect ratio based on the current desktop resolution instead of the resolution you actually set for the game. This will also work for games that always use the current desktop resolution without any resolution options.

The default for Unity engine projects is now a form of borderless mode running at the current desktop resolution with the in-game resolution option only setting the internal resolution; mismatched aspect ratios will be letterboxed/pillarboxed, so to avoid capturing the black bars as part of the video output you will need to change the desktop resolution or use the intended resolution in windowed or borderless mode.

There are third-party resolution tools you could set up in a batch file so that a simple shortcut will change the desktop resolution and start the game, then restore the desktop resolution when you exit the game.
