I'm sorry but I'm gonna have to break rule #2 because there are simply way too many awesome N64, Gamecube and PS2 games that I would love to play on PC with correct FOV and an x86/x64 executable file instead of an emulator.
So here's my list, in no particular order of games that I want from console land.

Well good news for you. Most of the games have a fighting chance on your list.
N64, Gamecube, and Dreamcast Emulators all have widescreen hacks. These do increase the FOV.
Unfortunately Pcsx2 doesn't have a widescreen hack yet. Also, it sucks that there are no respectable emulators for the original xbox.
For Shadow of the Colosus, there's a hack on the PS2 that allows games to be upscaled to 720p and 1080i. With this game, if you put it on 1080i (cringe) it actually extends the FOV and makes the whole game widescreen. I found that odd because it's a scaler chip, but it works quite well. I'm going to see if I can implement it through the emulator.
