due to misc. software issues I think the maxes are 4096x1024 for pre-8800/2900 series and 8192x1024 after, or close to that anyways.

11520x1024 can't be done with current hardware tech. 8192x8192 can theoretically though. It's a limit of the video card's maximum texture size. 3x DH2G + SoftTH (8680x1024) would be under the limit but who wants 6 monitors when the bezel is stuck in the center of the FOV? Always go odd numbers with monitors and surround gaming. Really, I can't imagine playability with more than 5 monitors. Besides 7 puts the hardware over the texture limit. :)

DXCapsViewer stats for 8800GTS 320's:

Eve?...tried it, and Eve does not like the SoftTH files and tosses them out of the game directory. Too bad, because I wanted it to work too. I'm in 0.0 in KOS doing some pew-pew with my Phoenix, Ravens and Drakes in 3-screen mode. Eve practically screams "gimme more UI room!". Donno how regular single screen players handle it.

It would be great if you can get 8 monitors running with a 360 FOV...of course you would have a serious case of whiplash knowing that you can just turn your head around to see behind you.

Due to the vast majority of games using a single rectangular viewport, a 360-degree FOV would not result in a useful image. We would need multiple viewports and/or curved viewports.
